Smoky Pineapple Margarita
Ingredients:
- Ice
 - 2 oz Suavecito Reposado Tequila
 - 1 oz orange liqueur (Cointreau, Grand Marnier®, or triple sec)
 - 3/4 oz fresh lime juice (from 1 roasted or torched lime)
 - 3/4 oz Smoked Pineapple-Chile Simple Syrup
 - Pineapple spear, 1 teaspoon sugar, and fronds for garnish (optional)
 
Directions:
Fill a rocks glass with ice. Shake tequila, liqueur, lime, and syrup with ice; strain into glass.
Brûlée pineapple with sugar and use as garnish. Add fronds, if desired.
Chef Tips
- To roast or torch a lime, halve a fresh lime and broil or torch until lightly blackened.
 - For additional smoky flavor in the margarita, smoke the margarita in the glass with a wood cocktail smoker.
 
Smoked Pineapple-Chile Simple Syrup:
- Mixed hardwood smoking pellets
 - 2 medium red Fresno peppers, halved and seeded
 - 2 cups chopped fresh pineapple
 - 1 cup granulated sugar
 
Directions:
Smoke peppers, pineapple, sugar, and 1 cup water on medium-low heat (~225°) in an 8-inch pan for 2 hours.
Purée, strain, and cool completely. Makes ~2 cups.
Don’t have an outdoor pellet smoker? No problem. Place the peppers, pineapple, sugar and 1 cup water in a medium saucepot and heat just to a boil, then reduce the heat and simmer 5 to 10 minutes or until the sugar is completely dissolved (do not stir). Then proceed with step 2.
